Candore, a crystalline classic method, whose fresh and dense perlage wraps like a white snowfall


The spumantizzazione of Erbaluce with the classic method represents one of the most affirmed expressions in the recent history of Canavese winemaking. Thanks to a relatively short stay on the refermentation yeast (18 months), our sparkling wine is characterized by combining the typical notes of the Champenoise method (yeast, bread crust) with a still perceptible residue of the primary sensations, such as the notes of hay, wild herbs, dandelion. The sensorial picture is completed by the remarkable acidity given by the early harvest (early September), which gives importance and structure, and by the absence of dosing in disgorgement, a precise choice to give space to the authenticity of this very particular vine variety.



Matching Classic Method sparkling wines, with mainly fatty and savory appetizers such as raw ham, fresh fatty cheeses such as burrata, or fish-based main courses, also in this case in varieties tending to fat such as salmon or herring. The strong minerality makes the Albedo very pleasant even with molluscs, especially oysters.
