Aging AND Aging
In bottle on the lees for 24 months. During the refining period the sediments are brought back in
suspension at least 3/4 times (Coupé de Poignet). Disgorgement: After 30 months on the lees is
carried out by hand the remuage on the pupitrès and the final disgorgement with the addition of
liqueur d'expedition.
Harvest
The grapes are selected and harvested by hand in the last decade of September in 20 kg perforated
boxes.
Vinification
Soft pressing with elimination of the colored fraction and obtaining of the must flower.
Clearing by nitrogen flotation to avoid oxidation of flavourings. Addition of selected yeasts
Saccaromyces Cerevisiae and conduct of alcoholic fermentation at a temperature of 15# C, part in
oak barrels
French, part in thermo-conditioned tanks.

Description
Historical post-war winery, "Pianbello", located in the heart of Langa Astigiana, in Loazzolo and Canelli, was born and grows with solid principles of tradition and authenticity, producing wines and sparkling wines that embellish as pearls the territory of Asti and, in the first place, its municipalities. A family-run winery, which has seen the succession of several generations, made up of people who have dedicated their lives to this activity, with passion, dedication and sacrifice.
