In bottle on the lees for 24 months. During the refining period the sediments are brought back in suspension at least 3/4 times (Coupé de Poignet). Disgorgement: After 30 months on the lees is carried out by hand the remuage on the pupitrès and the final disgorgement with the addition of liqueur d'expedition.

The grapes are selected and harvested by hand in the last decade of September in 20 kg perforated boxes.

Soft pressing with elimination of the colored fraction and obtaining of the must flower.
Clearing by nitrogen flotation to avoid oxidation of flavourings. Addition of selected yeasts Saccaromyces Cerevisiae and conduct of alcoholic fermentation at a temperature of 15# C, part in oak barrels
