Small but precious, the beans of the eye, are called the beans of the old world. Cultivated since the Middle Ages, these legumes with a particularly thin skin blend perfectly with soups. The characteristic that most distinguishes them from other beans is the black speck (eye) at the point where they stick to the pod.

Description

Beans of the eye a diet rich in legumes is an excellent starting point to have a healthy life and a tonic body.
Legumes are important in feeding due to their high content of vegetable proteins, easier to assimilate than animal ones.
The fibres and salts present in legumes help to free the blood from the surplus of fats. They are low in fat and rich in fiber (useful for the intestine), phosphorus, calcium, iron, potassium and magnesium.
Among the vitamins are present especially those of group B.

 

Soak in cold water for 6/8 hours. Always rinse with cold water.

Cook in plenty of unsalted water (4 liters for the whole package). Bring to a boil and cook over moderate heat for about 50 minutes. Salt only at the end.
