But in our Extra Apricot and Lemon jam, we only use freshly picked ripe apricots. For this reason, with our slow cooking, all their various nutritional properties remain unaltered: they are rich in vitamins, mineral salts and fibres and their antioxidant properties protect organs and tissues from the action of free radicals.Considered among the "fruits of youth", apricots also contain catechins, particular flavonoids that help our body to fight inflammation.
