Toma of cow’s milk from the cows of farmers in the Evançon valley. After the pasteurization is added a skillful mix of chilli, fennel seeds, cumin and juniper berries that creates a highly aromatic whole, which is enhanced in the preparations in the kitchen, when the heat releases aromas and flavors. The crust is rough brown and the paste is soft white typical of pasteurized milk, after the cut shows the variety of herbs aromatization.
