Cheese that is produced from whole raw milk, basic processing of a taleggio.

Characterized by semi-cooked pasta, not pressed, minimum maturation of 60 days, up to a maximum of 6-8 months. Rectangular shape, pink striped rind, dark white paste tending to yellow, fine holes, almost imperceptible. Soft paste, sweet taste.

Description

Delicious Toma from the small size of the form obtained from pasteurized milk of cattle Valdostan. The processing very similar to the classic toma, during the maturing, the reduced size of the shapes makes the maturing process more effective.

Cheese with a semi-hard, elastic texture and a slightly darker white colour towards the rind. The taste is intense with nuances of fresh butter, aromatic green grass, light toasted.
