Description
It is the classic toma of the Western Alps, with its soft, straw-coloured paste, and its strongly aromatic taste, which evokes the scent of herbs and flowers from the pastures of the Evançon Mountain Community. The shapes are cylindrical and the crust is dark straw-yellow, the paste has medium-irregular ochiature. In the maturing process, the organoleptic transformations highlight all the properties of mountain milk.
