The Toma of the Valley of Trovinasse is a delicious cheese produced with semi-skimmed raw milk (the milking of the evening skimmed and the milking of the morning), with semi-cooked and not pressed paste of straw yellow color and fine holes. The minimum ripening is about 60 days, up to a maximum of 10 months. Rosy crust when fresh, flowery and typically rustic when aged.

Toma from the reduced dimensions of the shape obtained from pasteurized milk of bovine valdostano.

Typical processing of the classic toma, during maturing, the reduced size of the shapes makes the maturing process more effective. The Toma of the Valley of Trovinasse is a semi-hard, elastic cheese with a white colour slightly darker towards the rind. The taste is intense with nuances of fresh butter, aromatic green grass, light toasted.
