Typical processing of the classic toma, during maturing, the reduced size of the shapes makes the maturing process more effective. The Toma of the Valley of Trovinasse is a semi-hard, elastic cheese with a white colour slightly darker towards the rind. The taste is intense with nuances of fresh butter, aromatic green grass, light toasted.
