The Boudin (sanguinacci or potato salami) are among the great classics of the Aosta Valley tradition, made even today by observing the ancient original recipes of the upper Aosta Valley.
This particular salami is prepared with boiled potatoes, peeled by hand and left to cool, cubes of lard, red beets (excellent natural preservative), spices, wine and bovine or pig blood.

How to useStore in a refrigerator (between 0 4 ) or in a cool, aerated area. If packaged it is advisable to open the vacuum bag 15 minutes before consumption.
