The botanical species belonging to the genus of the thistle are innumerable, what unites them,
where they grow spontaneously, is the flowering period or the period of maximum expression for
the plant
Between June and July, in Sardinia, bees dance from flower to flower, giving the opportunity to
harvest a pleasant honey monoflora to beekeepers.
Thanks to the persistent vegetable tone and the recall of a pungent aroma, thistle honey is
considered the ideal companion to legume based creams to be combined with vegetables or spiced
meats
It is also an excellent partner of sweet and sour, with the risk of a pinch of Dijon mustard.
