Cold smoking is the highlight of our know-how: we rediscovered this ancient process and decided to use it to give rot to the meat. For the smoking of this smoked trout, we chose beech wood and the precious alder, to give a balanced and unique flavor, suitable for all palates.

The color, slightly pink, makes it an elegant dish, suitable for sumptuous aperitifs.

Matching To be enjoyed natural or on a crouton, accompanied with butter. If used in hot dishes, always add at the end of preparation to prevent the product from cooking.
