Thyme honey

Characteristics:

  • Consistency: From cloudy to crystallized liquid, thyme honey is known to have an uneven consistency. Unlike many other honeys, this product crystallizes late and rather slowly.
  • Color: The shade of this honey recalls an ancient ring of dark amber from liquid, medium-light from crystallized.
  • Flavour: The soul of thyme honey has a spicy taste, slightly smoked, naturally sweet and slightly sour and bitter. The floral memory on the palate captures a chemical scent that can be described as a tip slightly close to melted plastic or liqueur wine.
  • Aroma: The aroma fully reflects the vegetal and chemical notes of taste and scent. In the mouth it almost remains the sensation of having just chewed the rough wood of a pencil or of having tasted a liqueur wine from acidulous cask.

Description

Between June and July, the rich flora of the Sicilian lands offers bees the sweet nectar of thyme that is then transformed into honey and given, in part, to beekeepers.

The particular taste of honey of type allows surprising and original combinations useful to amaze the palate of diners: from the floral, spicy and infused teas to matches with game and dried fruit. Great for keeping risotto and seasoning the fruit salad.
