This recipe has ancient and simple origins: the peasant families prepared the appetizer at the end of summer, when there was great availability in the gardens, to preserve the vegetables and be able to consume them in every month of the year. The characteristic of this dish is having a sweet and sour base with tomato. Among the varieties of vegetables that the appetizer can contain there are red and yellow peppers, cauliflower, celery, carrots, green beans, olives and cippoline.
