The vitello tonnato è un tipico antipasto Piemontese, realizzato con prodotti di alta qualità
Cucinato con la stessa ricetta con cui lo si preparava al ristorante di Belmonte: carne di prima scelta e una morbida salsa tonnata. Da molti chiamato ancora “vitel tonné”, ha invece un’origine italianissima e probabilmente piemontese: “tonnè” non sta per tonno (che all’inizio non era presente) ma per “tannè” che vuol dire “conciato” in francese. Quest’influenza linguistica d’oltralpe era dovuta alla presenza dei francesi nel territorio del Piemonte nel XVIII secolo.
