Our chef Laima has expertly created this very original recipe, reinterpreting the tradition of Japanese sushi with the use of Italian rice and fillets of mountain trout. A dish rich in taste that will make you travel from the alpine lakes of the Valle d'Aosta to the rice fields of Piedmont, through the largest moraine amphitheater in Europe: the Serra di Ivrea, where a unique grape variety is born called Erbaluce.
