Cardoon honey

Characteristics:

• Consistency: with its very fine crystals, thistle honey is creamy and compact to the touch: a naturally crystallized and pasty texture, very pleasant to the palate.
• Color: cardoon honey is characteristic for its typically amber color rich in greenish shades, slightly lighter and orange crystallized.
• Flavour: as if to recall the atmosphere of a florist’s atelier, the taste of thistle honey gives a floral feeling and little sweet. It is an imperceptibly bitter and slightly astringent delicacy that gives in the mouth a persistent vegetable tone.
• Aroma: the soft appeal of its scent, when tasted, allows to conceive the intense and slightly pungent aroma. Thistle honey releases in the mouth a slight floral fragrance, with a hint of cut stem or bouquet just faded. The memory to the palate, once tasted, recalls a scent defined as "animal" by the expert tasters of honeys.
