Cold smoking is our flagship: after the careful finishing, in which we carefully push our fillets by hand, we decided to use exclusively our traditional smoking recipe.
For the cold smoking of our rainbow trout, we chose cherry wood, alder and apple tree, to highlight the natural flavor of the trout and enhance its unmistakable taste.
