From the wood, like the oak in which Nebbiolo ages, like woods surrounding vineyards.
Our winemaking project is aimed at obtaining an elegant and refined Nebbiolo. The characters are typical of the Picotener variety: ruby red color that turns to garnet with aging, fine aroma with complex bouquet of flowers and red fruits, in particular strawberry and cherry in spirit. Tertiary notes are not predominant, thanks to the aging in wood limited to a single part of the entire mass. The structure is important, body and persistence sustained; the tannic characteristic of Nebbiolo is velvety, the acidity balanced.

Interesting are the complicity between the classic characteristics of this great Piedmontese vine and the Prealpine terroir, which introduces specificity in terms of soil composition (moraine), morphology (high slopes, terraces), exposure and climate.
The vinification process requires a maceration on the skins for 7-8 days, to regulate the contribution of tannins, preserve aromatic freshness and ensure organoleptic cleanliness.
Matching ideal with stewed and seasoned main courses, red meat or game.
