The caserecce di semolato bio are part of the large family of fusilli and are originally from southern Italy. They are a variant of busiata (sicilian pasta) or busa both produced in islands in contact with the Arabs.
This format can also be found under the name of "casarecce" although the etymologically correct form is, according to the Accademia della Crusca, "caserecce" which means "homemade", "genuine".
IDEAL WITH
The caserecce are a format particularly suitable for thick and creamy sauces such as a ragù rich in meat or with a cheese base, as in the Roman recipe with cacio e pepe.
